My days are cold and snowy…………….
And…… my nights are dark and long…………….
I’m dreaming of………….
The bright beautiful signs of Spring…….
And…the dog days of Summer!
BUT……………………………..

I think I can make it through a few more weeks…..of Winter Bliss……
I’ll turn on my lights for a warm touch on these last few days of Winter dreariness…..
I’ll enjoy the glow of candles lighting my nights……
And I’ll eat a few more bowls of Winter soup…. and thank God for all his Goodness…this Winter!
He’s kept us safe and warm! He’s fed us, clothed us and provided our every need!
Recipe follows~
Often, this time of year, I buy a roast big enough to enjoy 3 meal out of it…first meal….just pot roast with veggies, second meal, left over roast beef made with gravy poured over noodles….and now….the third meal…..vegetable soup with the left over roast beef made with gravy, and that’s were we will start Meal 3………….
take your left over beef and gravy…..mix in what ever veggies you like…..my preference…green beens… (often left over from 1st night)….white been, potatoes, corn…etc… then add 2 small cans of diced tomatoes and 1 large can of tomato sause….add water to the consistency you prefer.
keep some extra small cans of tomato sauce on hand…just incase you need to add more for taste…or you can use tomato ketchup. Don’t forget to add salt and pepper…a little garlic…..and……..the most important ingredient in any soup……….
or Tabasco works great too! I love this stuff…..use carefully….just a little for flavor or a little more for just the right KICK! I even add this stuff to my scrambled eggs or omelets when I make them…it really gives eggs a wonderful flavor…..BUT be careful, if you’ve never cooked with it…start out slow!
Then slow cook all day…..and eat on it all day…. ;)
OH….don’t forget the cornbread!
If you have any of this left over….it is great to freeze in small plastic containers….you can go to the freezer and pull out a serving or 2 when you need to! EASY PEASY!
Well girls…Spring is just around the corner!!! Can we make it a few more weeks of Winter????? YES we can!!!! So what are you going to do to enjoy what’s left of Winter????????

Nancy, I always enjoy your posts. Well...Winter in Manitoba will probably last another three months so I'm not thinking of Spring yet. I will be in three months time, though. I must say that I say your post about making 3 meals out of 1 roast last year and I thought it was genius. I never eat left overs and with 4 small kids we rarely eat a whole roast. I took your advice and it has been the best thing. We now always eat all of our roast and even I love it. Thanks so much for sharing. You've saved our family a lot of money and me a lot of guilt.

Girl we have been snowed in here for 6 days!! My son and I were supposed to go to Chicago last Thursday for a college visit and our flights were canceled. We are in the process of rescheduling all of that. No school since last Wednesday! Finally today it is all melting.
Your roast 3 nights is a fabulous idea. My roast never seems to make it 3 nights..just 2. It's seems like it's hard to find really big roasts any more. That's probably a sign that not as many people are cooking.
We sure have been missing you. I seem to lack blogging inspiration these days. We need a Flaunt Your Reds party!!

My favorite season, by far. I love everything about it...the cold crisp air, the snow (except when it gets muddy and slushy :O)
warm throws, hot soups, fires in the fireplace, hot drinks...
I am hanging on to it for dear life...then, once it's gone, I will love summer. Guess when you get in your Winter season of your life, you want to hang on to every single minute, day, season....
