TIP~ When I look for a Roast...I always buy one big enough to get 3 meals out of it. First meal~ I do the traditional roast with potatoes and carrots
Second meal ~ I do the hot roast beef sandwiches or Beef & Noodles and the Third Meal~ I make homemade Vegetable Soup with the left over beef and gravy~
This saves a lot of money and it makes it EASY for me, These are quick and delicious meals...that you just can't beat with a ten foot pole...as my Mom always says....lol ;)

What I am up to this week~ Cleaning! Trying to get a few things cleaned out and organized~ Mission impossible~! I have a couple of craft projects I am working on, but it is a slow process for me! I have come to 2 conclusions....1. don't turn on the putter until everything is done for the day! and 2. There just isn't enough hours in the day! Next, I have to brag a little here...I am working on two internet decorating consultations right now and let me tell you....I am loving it!!!! What a joy to work on these! They are both going to be fabulous! I am so thankful for these ladies giving me the opportunity to help them! I don't {think} I will be posting again until the weekend....I just have so many things going on right now!
Oh, some of you have ask about Hoss and Lucy~ so here is the update~ They went to the Vet again last week for another set of shots~ Hoss never meets a stranger....Lucy tries to hide from everybody~ they are so different! Hoss now weighs 26 lbs and Lucy weighs 24 lbs....I can't believe how big they are now! They are loosing that puppy look so fast! I do appreciate all of the questions about them!

Nancy, you just talked about one of our very favorite meals too. I love to get a big roast and stretch it out. Same with meat loaf...I made a really big one last week then we had meatloaf sandwiches. Yummy!

I love me some Roast Beef, LOL I got one over the holidays(holiday roast) from a butcher shop you could cut with a fork, so good...I never get 3 meals though, they eat it here like its going out of style. I definitely get 2 though :)

When I think of cold weather comfort food, I always think of fresh baked hot bread with lots of butter. I made some yesterday, it was a perfect cold day for it.
My husbands favotite food is the roast beef, mashed potatoes and gravy. Your pictures make me hungry!

I meant to tell you earlier that love the picture of the front of your home. It's so southern. It reminds me of the subdivision I lived in when I was in SC, and it was so classic Southern. I miss it. Homes are more lodge-like (Craftsman) or Florida-ish here.

It is exactly the meal I cooked this weekend...a beef roast...but mine was only 2#, so I wasn't as smart as you to plan for leftovers.

That roast looks fab, we do almost the same thing. We have slow cook ours in the crock pit, then we use some for burritos!

It is early in the morning, the house is quiet, my mug of coffee is hot, and I am sitting here reading your blog, and so enjoying the experience. The hot roast beef sandwich and whipped potatoes makes me want to skip breakfast today and go right to the dinner hour. The way you photographed the food is amazing!! My grandma always said that butter and sour cream never hurt anything...she added that to most everything that she baked and cooked in the kitchen. Thank you for creating this beautiful blog for all of us in the blogging world.
